hello,
I'm using a langauge pack. I know the textes are in the text.php and I can change with custom-text.php. I can change every text but the status of tickets. I see the textes in the file ("wait_reply" e.g.), but if I change it, it is still the default of the language pack. why ? how to change ? where does hesk get this translated text from then ?

It's the same file, but statuses are cached.
When you make the changes, clear cache: go to admin > Settings > General and click "Save changes"
