You need to customize the Hesk language file.

When you do the above, you need to clear Status cache. Go to Admin panel > Settings > General page and click "Save changes" at the bottom, that should clear the cache.

No, HTML emails are not supported in Hesk yet.

No, mails are plain text (in all langauges), no HTML code will be processed

Not with Hesk, you probably had "Mods for Hesk" installed
