ERROR: Please select Hesk language

I am trying to setup Hesk and when I try and change settings and save them, I keep getting an error saying:

Please select Hesk language

I click on the dropdown and nothing shows next to default language. When I click on Test language folder I also get:

|----> MISSING: reset_password.txt

I have verified that all files are on the server.

How can I fix this? Just an FYI, this is a brand new install.

Here is the system info:

HESK version: 2.7.3 - HESK is up to date
PHP version: 7.0.22-0ubuntu0.16.04.1 (MySQLi)
MySQL version: 5.7.19-0ubuntu0.16.04.1

You either don't have any email templates inside the "language/en/emails" folder or PHP is unable to read those file (check permissions).
