Add or remove columns from Home "Open Tickets" page

I found lots of folks asking how to add columns to the main Home page where 'Open Tickets' are displayed although not seeing any details on how to do it. I specifically want to show the "Owner", "Updated date/time" and "Category" as three additional columns on this "Home" / "Open Tickets" page.

I would also like the default Sort to be base on "Updated" with newest on top but that is less important.

Can this be done?
