How are spammers getting through?

What terms did you try when SEARCHING for a solution:

Write your message below: WE are now getting plenty of spam and it is seriously
reducing the effectiveness of Hesk Desk. I have activated captchas/ test questions, yet I still get these ridiculous useless spam messages. What I don't understand is the lack of an IP in the ticket

These are coming from emails (email piping or POP3 fetching) hence the lack of IP address.

HESK doesn't filter incoming mail for SPAM, your server should.
