Is there any sort of user manual or tutorial about using all the features of HESK.

At the moment I just seem to be stumbling through each part as best I can setting things up, and I can't tell if I'm missing out on any good features that I should be using.

I'm afraid not - there is no manual for HESK at the moment.

When you install HESK there is a message inserted - in admin panel under "Mail" with subject "Welcome to HESK!". You will find few steps there to get you started.

Other than that it is up to you to browse through the pages and test all buttons/settings.
