I was trying to install the Hesk Support script on a Unix server, but cannot change the file permissions on the "hesk_settings.inc.php" file and the "attachment" folder. I have looked everywhere but cannot find instructions to change permissions in order to successfully install the script on the server.

If on a unix server you should be able to do it over FTP, see this tutorial:

Otherwise you will need to contact your host and ask them to set the correct permissions.
