Category Repurpose and Auto assign?

Hi,
I would like to repurpose the categorys section and use it for the different companys I manage.
Can anyone advise on how to remove the categorys section from the submit a ticket page, my attempts have not been sucsessful, usually resulting in 'please enter a category'.
I just want it to default to the defualt which i have as unassigned.
Also whilst im here something i would like to be able to do is to auto assign a category (in my case it will be a company) depending on the email address domain. I have the email pipeing installed (and works perfectly!) advice on this too would be great.
Im fairly good at reading code and get the gist of what is going on, but im no coding expert.
