Creating a ticket for the Customer

What terms did you try when SEARCHING for a solution:

how can i Creat a ticket for the Customer in admin. and on the ticket it will say "Last replier: me (helpdesk)". Once i creat the ticket, a email will be send to the customer.

If you were to look at the link above you will see "Category: " how do i remove that.

The creation of tickets in Admin for the customer can't be done... Only way I can think would be to just use the front end that the customer would normally use and fill a ticket in for them. However, you would need to put their email address in or they wont get any notifications in the future. Only problem would be that it would show like the customer just created the ticket and not you....
