Emails sent to staff

I am just trialing hesk and will have 4 categories setup. All 4 can be dealt with by one member of staff. There is also one other staff member who deals only with one category. I would like to add to the emails sent to staff the name changing

to

Hello staff name

To help the staff member who deals with all four categories, I would like to include in the emails the category of the enquiry.

For both of these I have checked the readme.html but can find no placeholders for either of these. How would I create placeholders for staff and category?
