email import: change name variable

where can I find the script with "INSERT INTO tickets" table ? because when someone create a ticket with sending a mail and in the name is a emoji, I get the name with a "?". I want to change this part of script.

You are probably looking for inc/pipe_functions.inc.php or inc/posting_fucntions.inc.php
