Is there a way to automatically assign due dates to new tickets submitted by customers?
Every ticket submitted to our Helpdesk is supposed to be solved within 7 days, and manually adding the due date to each ticket is too time ineffective for our ticket solvers.

There is currently no such feature in the self-hosted version of Hesk, but this can be set up in the Hesk Cloud Plus using the Escalate module.
