Hello, I discovered a bug in both version 3.0 and version 3.0.1. After configuring the POP3 Fetching settings and clicking save changes, the settings are not saved and Email Piping is automatically activated.
Here is a GIF showing the bug. In the example below I used fictitious settings, but I did the test using the settings of my email provider and the bug remains.

That's because the POP3 details you entered are not valid.
Enter valid details and click "Test connection" to make sure the details you entered work. Once you get a successful connection, it will save.

I used a valid one. It was the same. In the video I just gave an example to show that the configuration is not saved.

You are right, it's a bug. Thank you for reporting it.
This should fix it (unzip and upload the file to your Hesk "admin" folder - overwrite existing one):

Only the email confirmation field is not showing up when creating the ticket. Even with the option enabled.

The "confirm email" property only applies to customers. Staff do not need to confirm the email address even with confirm email turned on.
