I'm using Mods for HESK in Knowledgebase mode only.
In this mode you still see (or at least in my installation, 2.6.8, with newest mods for hesk) the Ticket Menu in the top menu bar.
Question: is there a setting I didn't see to remove the Ticket menu completely?

Nope, you didn't miss any settings; it's just a bug in Mods for HESK 2.6.4 
In the meantime, you can manually remove the ticket tab from the top by deleting lines 294-312.
