Alter Guestbook text?

Hi

I have a small website where I sell made to measure products, I would like to add a customer comments/feedback page so people can leave comments about the service I have provided them.
Looking at the junkyard guestbook this would work great if I could change some of the wording to reflect it being a customer comments/feedback page rather than a guestbook.
Now if I am not breaking any rules with regards altering this text I would like to change the words on the sign guestbook page (View Guestbook) and (Sign Guestbook) also on the same page I would like to remove the text above the box where people add there comments, where it says “Sign Guestbook”
I presume that once this text is changed it will also change when I click View Guestbook?
I have looked for the file containing the text I wish to alter but could not find it.
If someone could point me to the file I need to edit to achieve the desired look (that’s if I am not breaking any rules) it would be most appreciated

OK found the file I needed to change text "language.inc.php"
