is there a specific way to format the email a client must send to system in order to be fetched and transformed in ticket? A sort of mail template?

No, Hesk will get:
- customer name and email address from email header
- ticket message and attachments from email body

You need to decide which email to ticket process works best for you:

Then, follow the instructions for setting up that process precisely (links in above article).
