I want to add the autocomplete="off" tag in some text-fields in the ticket creation for customers AND also in the admin_main.php in ticket-search, that the browser dont save this useless entries. in which files are this HTML ?

For customers, look at "template" folder.

For admin, look at "inc/show_search form.inc.php"

where is the folder "template" ?
