I couldn't find any topics about this.
How do I change the things in "Create a ticket".
Right now they are just "Name:", "Mail:", "Subject:" and "Message:".
Is it possible to change the names of those or add new fields?

Sure, you can add custom fields in Admin panel > Tools > Custom fields.

You will find also several options to make some existing fields required/hidden in Admin panel > Settings > Help desk
