I don't want to download Guestbook until I know more about its capability.

The Director of our non-profit wants our website to have a spot where clients/friends can write comments and add their names, addresses, phone numbers, and email addresses. Comments could be visible to other clients/friends, but the other information would be available only to our organization. I have two questions, and can't find the answers on the forum: 1. Will Guestbook allow adding this information? 2. Is it secure, or can it be secured, so that the probability of this information being accessed by hackers is low?

GBook was designed to be a PUBLIC guestbook, so any information entered will be available publicly.

Rather than trying to use GBook for what it was not designed to do would probably be better off finding a different script more specialized towards your needs or even having a custom script written.
