Changing text on guestbook

Is there a way to change the wording on the guestbook? I'm trying to create a review page, so I want to change the text from "guestbook" to "review". I chose the guestbook because it'll work exactly like a review page. Also, any way to delete the "state" field? I don't know which page to do that on. THanks.

All the text used by GBook is in the language/english.inc.php file.

That worked perfectly, thank you. Is there any way to delete certain fields? I don't want to collect email addresses, or state information, or is the email necessary? Thanks, I'm learning slowly but surely.
