Is there a special tag for when the case is set up?
As I can insert in the mail?

for example.:
%%TICKET_CREATE%% = insert the date and time of when the ticket is created in the mail

No such tag is currently available, only the ones listed here:

It shouldn't be hard to add though, you can expect it in the next incremental release (2.5.1) in the following weeks.
