Blocking off emails/details?

Hello there,
So what I am hoping to do is not allow my staff to see the client's email to provide a sense of privacy for me and my clients.
Is it possible at all to have an email field however have it only visible to certain accounts? Perhaps as part of an account creation option administrators can see emails and non administrators can't?
Also another option is it possible to submit an email without having it posted in the ticket just having it on file visible to the administrator and notify the customer on response.
