I guess not many Polish people read the forum daily.
I think most people who translate GBook only do it for themselve and do not post it here. So it leaves everyone to have to create their own translation. So there probably are Polish translations, but they are just not posted here.
I did a search on the internet, here are some examples of translated versions. There is a Polish translation for version 1.6. maybe you could use it to start. You can find it here viewtopic.php?t=2187
But it is only a little more than half of the needed strings that are translated, a lot of new strings have been added.

I do not monitor the Gbook forums regularly anymore since I do not use the Gbook script myself anymore for a long time. But it helped me a lot in learning to understand php.
