I'm using the latest version of hesk on my 110mb account. I have fsockopen enabled and a need to know how to configure hesk to work with fsockopen and my google apps account, I have a an address (helpdesk@joshnicholes.com) setup that I would like to use. I apologize if this is posted somewhere else on the forum.

I am afraid this is not something we can help you with, your host must ensure that mail() function is working properly.
